Acai Berry & Matcha Mango Nicecream

Nicecream is the healthy & plantbased answer to your summer icecream cravings. This recipe is super easy and quick to make yet so smooth, creamy and delicious! Because this recipe only uses healthy & nutritious ingredients you can enjoy it even at breakfast in the summer when it is sunny & hot outside and all you want is icecream. It is also dairy free, sugar free, gluten free & plantbased.

Creamy & Smooth

The key to getting the best creamy and smooth nicecream is by using frozen banana. For this recipe I always take ‘normal’ bananas; make sure they are ripe – not green! – but also not overripe.

The second trick is to blend it for quite some time to make sure there are no lumps and you have delicious smooth nicecream.

Perfect timing

Nicecream is enjoyed best when it’s ice cold but not completely frozen. When you take the nicecream out of the fridge you will not be able to scoop or eat it immediately. Therefore I did a little nicecream experiment and these are the best timings to make sure you nicecream has the perfect texture right when you need it.

The best timings are:

  1. Right away! Because you are using frozen ingredients your nicecream will be smooth and creamy yet still cold right after making it. The longer you wait the more it turns into a smoothie, which is also delicious so no problem here! This is best for when you want it at breakfast first thing in the morning, or when you have this sudden craving for icecream. And it also takes only 5 minutes to make this so that is just perfect!
  2. After one hour in the freezer. To get a more frozen and icecream texture compared to the first option you place the nicecream in the freezer for one hour after making it. Check regularly, it will probably be best 30-60 minutes after placing it in the freezer.
  3. After 2-4 hours in the fridge. If you have made this in advance and it is completely frozen place the icecream from the freezer into the fridge for 2-4 hours before serving. After around 2 hours you will have be able to make perfect scoops!

Topping Top Tips

The best way to eat this is by adding some delicious toppings to your bowl. These also have several health benefits because they are high in antioxidant, vitamins and minerals, healthy fats and fiber. Make sure you use only 1 teaspoon per topping especially with the nuts and seeds! You can never go wrong with fresh berries so you can add as many as you want!

My favorite toppings that I always have in my pantry/fridge are:

  • All berries
  • Banana
  • Passionfruit
  • Raw nuts (almonds, walnuts, pecans, etc)
  • Peanut or other nut butter (be careful to only use 1 teaspoon!)
  • Flaxseeds
  • Hemp seeds
  • Raw cacao nibs
  • Chia seeds
  • Grated coconut
  • And much much more!

Equipment

Ingredients

For the Acai Berry:

  • 150 gr frozen banana
  • 150 gr frozen blueberries
  • 100 gr soy yoghurt
  • 2 tbsp acai berry powder
  • 2 tbsp stevia or other sweetener optional
  • Splash of plantbased milk

For the Macha Mango:

  • 150 gr frozen banana
  • 150 gr frozen mango
  • 100 gr soy yogurt
  • 2 tsp macha powder
  • 2 tbsp stevia optional
  • Splash of plantbased milk

Instructions

  • Place all the ingredients per nicecream flavor – except the milk – into your blender or food processor.
  • Blend until smooth. Especially in the beginning you will need to stop blending a few times to scrape all ingredients from the sides to make sure everything will be blended evenly.
  • If the frozen fruits are too big and/or it is too frozen to blend add a splash of plantbased milk to make it easier to blend into a smooth creamy texture without any lumps.
  • Serve immediately or place in the freezer for later use.
  • It’s best to serve the nicecream after 1 hour in the freezer. Or after 2-4 hours in the fridge after it has been in the freezer before for more than 1 hour.
